It all comes from the same plant, Camellia sinensis.
Essentially, this plant gets processed differently, so a white tea is just withered and then it’s dried ... . A green tea usually is wok fired or ... steamed and then it’s dried ... .
Oolong tea is fermented slightly, but not as much as black teas, so it’s between green tea and black tea, and those are the four essential varieties of tea ... .
Right now what’s going on with tea is that people are so focused on the health benefits it’s sort of obscuring the fact that there’s so much flavor, diversity and complexity, and what you get out of this is really much more than something that’s good for you.
